Mediterranean pasta salad

This is a classic mediterranean salad that never fails to disappoint. Good for summer days and healthy lunch for work. It will keep you full and will take you only 30 minutes to prepare it!

  • Ingredients:

- Pappardelle pasta.

- Green beans (optional).

- 2 tablespoon of olive oil.

- 2 shallots, sliced.

- 3 anchovy fillets.

- 1 tablespoon of capers.

- Handful of black olives.

- 14 cherry tomatoes.

- 1/2 lemon juice.

- A can of tuna.

- Handful of fresh parsley.

  • Preparation:

  1. Boil the pasta in a saucepan.

  2. Drain the pasta and reserve two tablespoon of the cooking water.

  3. In a bowl, put the pasta and the cooking water.

  4. Heat the olive oil in a pan and fry the shallots for 5 minutes.

  5. Add the anchovy fillets, the black olives, the capers and the cherry tomatoes and warm for 3-4 minutes and stir in the lemon juice.

  6. Drain the tuna and put it into the pasta with the other ingredients and the parsley.

I took this recipe from the book delicious. written by the magazine editor Matthew Drennan. It's a good cooking book, with a collection of different illustrated recipes that are founded on every day low-cost ingredients.
