Rice with broccoli and tofu

If you are a Broccoli lover, this is a healthy and easy recipe that will take you only 30 minutes to prepare. Broccoli is a very good source of vitamins and fibers and tofu is a good source of proteins. After eating this meal, you will feel better and satisfied.
Ingredients:
- A block of tofu
- Broccoli
- Rice
- 1 vegetable broth
- A clove of garlic
- Soy sauce
- 2 tablespoons of sesame oil
- A pinch of salt
- 1 teaspoon of black pepper
- 1 teaspoon of minced garlic
Preparation:
In a pot, bring water to boil and add the rice. Cook it over 15-20 minutes depending on the rice.
Wash the broccoli, cut the leaves from the broccoli and the florets and set them aside.
Cover the tofu with a paper towel and heat it in the microwave for 1-2 minutes.
Cut the tofu in dices, put a tablespoon of sesame oil in a pan, add the tofu and fry it during 5 minutes until it looks crispy.
Chop the clove of garlic.
Put a tablespoon of sesame oil in a large pan, add the garlic and cook it quickly and over medium heat, for 30 seconds approximately. Then, add the florets of the broccoli, a cup of vegetable broth and cover the pan with a lid. Cook the broccoli for 10 minutes without moving it and until it's soft.
Add the tofu and rice to the broccoli. Move it around a bit.
Add a pinch of salt, minced garlic, black pepper and soy sauce and move it around a bit.
Serve warm and add more soy sauce if you want. And ¡buen provecho!
Personally, I always put more soy sauce because I love the flavour and it has also health benefits. If you cannot tolerate soy sauce, there are some soy-free products that you can use for this recipe.
